You wouldn’t BELIEVE me but, as much as I love trying different cuisines from all around the world , it’s really good just be home again eating my kind of food . ✨ But I’m also always keen on taking some inspiration to spice up my own creations at home. . . This berry and coconut yoghurt parfait has a little taste of Turkey 🇹🇷 . It’s also an “instant” version of my Turkish Sherbet inspired berry crumble that’s still to come. . ‼️FYI Turkish sherbet is a drink that can be enjoyed hot or cold with ingredients like rose water, pomegranate, orange and 43 different spices ! Insane. . . . TURKISH SHERBET INSPIRED PARFAIT • 1/2 cup coconut yoghurt • 2 Tbsps @happybeingco collagen (or protein powder) • 2/3 cup blueberries (frozen or fresh) • 2 Tbsps orange juice/ pomegranate juice • 1 tsp orange zest • 1 tsp rose water . . GRANOLA • 1 cup rolled oats • 1/4 cup chia seeds • 1 Tbsp orange zest • 3 Tbsps coconut oil • 1 tsp cinnamon • 1/2 tsp cardamom • 1/4 tsp nutmeg (optional) • 1/4 tsp cloves (optional) • 3-4 Tbsps honey/maple syrup • 1/3 cup slivered almond (optional) . . 1. Prepare the granola by mixing all the ingredients and spreading it out evenly on a baking tray lined with a piece of parchment paper. Bake for 20-30 minutes on 180C or until golden brown. Take out and let it cool down. 2. On the stove top in a small sauce pan on medium-high heat , bring the the blueberries, rose water , orange zest and juice to a slight simmer. Stir and squish some of the blueberries with the back of a fork or spoon to release more of the juice. Simmer on a lower heat for about 3-5 minutes and then remove the sauce pan from the stove top. 3. Once the berry compote and granola have cooled down you can start to assemble. Mix the coconut yoghurt with collagen or protein powder . Layer the coconut yoghurt, granola and berry compote however you prefer it. If you are planning to make it a to-go for later, separate the granola from the berry compote and yoghurt to add in later. . . _______________________________________________________

Not a single complaint because these people know how to make a PROPER hummus and eggplant. 👌🏻 Picked up a quick lunch today in the Jewish quarter of the Old City of Jerusalem. . . Laffa which is thinner than pita bread but a little thicker than a wrap. Rolled with eggplant, silky smooth hummus, cabbage, pickles, tomato , cucumber, lettuce , fresh cilantro , crispy,smokey turkey and a generous drizzle of tahini. . . ____________________________________________________

WADI RUM | Waking up at sunrise in the desert was so serreal. In addition to that having breakfast in the replica of the marsian dome tent used in the film ‘The Marsian ‘. Frikken out of this world cool. . Besides that , breakfast in Jordan has been taking a bit of getting used to, as they mostly serve salad greens , hummus , boiled eggs and some sort of pita or laffa. That being said I’m beyond happy that j I packed my own stash of rooibos tea bags and matcha because they only serve black tea everywhere you go. Sometimes it’s nice to have a little taste of home or just a little piece of your normal routine to help ground you. For me that’s my tea routine. . _______________________________________________________

Did you know that they actually have watermelon plantations in the desert and it’s the sweetest watermelon you can get in Jordan. Rollin’ in chaga before my flight ✈️ . . If you haven’t tried these chaga crunch this weekend is perfect for getting your (non) bake on. Chaga has high levels of B-Vitamins, flavonoids, enzymes, minerals, and phenols and contains some of the highest known concentrations of antioxidants of any food, such as melantonin. It’s also a rich source of Zinc, an essential nutrient for cell growth, differentiation and survival as well as Germanium. Read about the functions of all the ingredients over at the L I N K in the bio. . . RAW CHAGA CRUNCH BALLS • 12 medjool dates pitted • ½ cup pumpkin seeds •2 tsps Ceylon cinnamon • ¼ cup vanilla pea protein • 3 tsps maca powder • Pinch of salt • ¼ cup brewed chaga( ¼ cup water + 2 tsps chaga) • ½ cup activated buckwheat groats lightly toasted . . 1. Bring ¼ water to boil , add 2 tsps chaga and let it simmer for 5 minutes. Alternatively use a coffee plunger . 2. While the chaga is brewing add all the ingredients except the buckwheat to a food processor/ blender and give it a quick blitz. 3. Slowly add the brewed chaga little by little and blend it in between. Making sure you only as much liquid as needed to make the moist enough to roll into . 4. Scoop the mixture out into a bowl and add the buckwheat . Combine . 5. Roll about 1 tablespoon of mixture for each ball and then roll into raw cacoa powder. 6. Place the in the fridge for about an hour before taking out to enjoy. Store in the fridge. _______________________________________________________

Serves : 2 wraps FALAFEL • 1 @outcastfoods classic falafel premix • 1 tsp zesty spice @capeherbandspice • 2 Tbsps seeds • 1 Tbsps black sesame seeds • 1 tsp @clemengold zest . . WRAP • 2 whole wheat wraps • 1 @clemengold • 1 cup romaine lettuce , chopped • Red onion, sliced • 1 hand full sugar snap peas • 1 hand full rocket leaves • salt & black pepper to taste or a sprinkle of zesty spice @capeherbandspice • 5-6 mint leaves (optional) • black sesame seeds & seeds ( optional) • 1 Tbsps dried cranberries (optional) • Avocado, slices (optional) . . DARIY- FREE YOGHURT DRESSING • 1/2 cup unsweetened coconut yoghurt* • 2 Tbsps lemon juice • pinch of salt • 1 Tbsp Apple cider vinegar • 1 tsp honey *can use plain yoghurt . . Note : use a small piece of twine to keep the wrap together. . . _______________________________________________________

TOP TIP TUESDAY | stop-motion + PMS smoothie recipe . . There’s really a lot you can do with stop-motion and dare I say it’s much easier than making an actual video. Pouring, stacking, eating something , styling or any movement that can be captured in different photos to make a video. The possibilities end where your imagination ends. . . 1. Don’t move the camera or phone . So having it positioned perfectly (tripod or another creative way ) before you start and simply snapping away is ideal for stop-motion so the only thing moving is the object in the frame and not the frame itself. . . 2. One movement = one shot . So usually 25 frames makes second in a video. When you start to edit you can decide at what speed the frames go. ( I usually go for 0.5 sec per frame). I use Lightroom Desktop to edit one of the frames and then just sync that edit to all the other photos. Export. And then import into Premiere pro to make a video. BUT you can also do all this on you phone. Simply edit one of the photos in Lightroom mobile app and copy that settings to the rest of the images. Export. Import to InShot app ( video editing) . Select duration of each frame by clicking on the image. Save. Voila. . . 3. If you are working with natural light , try and work as quickly as possible because the light is constantly moving. So if you are going to take an hour , trust me the shadow shift will be visible. . . 4. KISS - Keep It Simple Stupid . Keep the props, background and everything around the movement simple and “clean” so the focus is on the movement . Also keep it simple when it comes to the movement itself because it’s the most simple movements that’s the easiest to capture and ends up looking the best. . .
