Another tofu and veggie dish- this time with peanut sauce. Tofu is not bad- you just need to learn s few ways to prepare it. Stir fry, curry, or baked tofu are all amazing options.
Turmeric tofu scramble. If you are looking to replace eggs - there are several ways! This vegan Tofu scramble was made with turmeric and a little bit of salt. - It has protein - it has a good scramble texture (use firm or extra firm tofu) And.... it is super tasty!!!

Salt and pepper to taste This is one of my favorite soups to date. Soup-er easy to make, creamy, and perfect as a leftover. Cook the potatoes first and lightly smash them before draining the water and adding the rest of the ingredients. What’s your go to plant based soup?
One of my favorite pictures of my dad. This pic was of him before I was born- and I just love his crazy hairstyle and feel like this just showcases the rebel that he was. I also wish that he’d taken better care of himself and was still here - he’d be in his 70’s now. Watching his health struggles is part of why I’m so health conscious today. Happy Father’s Day.

1 cup of red lentils Black beans Chili beans Green chili’s 3 cups of mixed veggies Juice of 1 lime Smoked paprika Chili powder 3 cups of diced tomatoes 2 tablespoons tomato paste Salt and lemon pepper to taste 30 minutes on the stove to a very filling meal I added some nutritional yeast on top for additional flavor. Perfect meal since yesterday was a late season rainy day here in Portland.

Sometimes you want breakfast for dinner. Steel cut oats with a sweet organic apple - then I added some coconut sugar, strawberries and blueberries as a topping. Oatmeal is good as an additional source of fiber and protein. Despite its high carbohydrate content, it is a low glycemic index food- so you’ll get an energy boost, but it will be a slower, steadier release of energy, not a sugar rush. What do you add to your oatmeal?
Saw this on my walk through the park the other day! More people are waking up to the environmental impact of animal agriculture, the true conditions that most animals are subjected to, and the health benefits of adopting a plant/based lifestyle. It may not be for everyone, and I don’t judge others because their dietary needs may be different from my own- Just know there is a lot of support out there (including me!) if you want to embark on a plant/based journey.
Green curry lentils and veggies Green lentils Mixed veggies 1 table spoon green curry paste 1 cup coconut milk- full fat 2 teaspoons lime juice 1 small handful of cilantro chopped 1 cup brown rice This curry was one of the tastiest I have cooked. Brown rice was a great addition to add texture and make the dish more filling. It may not be the prettiest dish, but it is healthy and tasty!
Lentils and stir fry veggies. There are nights when you just want to keep things simple. Guess what, there’s quite a bit of protein in this dish. Easy to make - less than 20 minutes. I added tamari, siracha, and a tiny amount of maple syrup for a sweet and spicy stir fry flavor. Veggies include: mushrooms, asparagus, green beans and bell peppers.
Keep your snacks as unprocessed as possible. . Extra salt, refined sugar, and oil can be harmful to your . Choose whole plant foods as a snack whenever possible. . The preservatives in most snack foods only help with shelf life. Those products often leave you unsatisfied and hungry for more sugar or salt. If you make a habit of responding to cravings with healthier choices, it’s very likely that your desired snack choices will change!
As we move into summer, cooking can be less and less appealing. I’m all about meals that take less than 30 minutes to prepare.’ . I did soften the chickpeas and veggies before adding them next to a delicious salad, and sprinkling Vegan Parmesan. . Eating a plant-based Vegan diet doesn’t have to be complicated!
