Thought I'd share! Stuffed Cabbage & Egg Frittata meal prep- super easy!!!! I am ALL about easy & quick so these recipes were perfect for me.
Stuffed Cabbage = 1 head of cabbage, 1lb ground turkey, 1 diced onion, 1/2 cup cooked jasmine rice, garlic powder & Mrs. Dash. Either boil cabbage leaves or cook in microwave for about 9 minutes until leaves are soft (google how to cook cabbage leaves). Mix ground turkey, onions, rice & seasonings together. Scoop out enough mix and put on top of cabbage leaf. Roll up leaf. Once turkey mixture is gone, pour 1 can diced tomatoes in large pot on stove. Add all cabbage rolls to pot. Pour 1 more can of diced tomatoes on top + 1 can of tomato sauce. Turn stove on high. Bring cabbage to a boil. Once boiling, cover with lid and turn heat on low. Let cook for about 40 minutes or until turkey is cooked through. Enjoy!
Frittata = sliced cherry tomatoes, mushrooms, broccoli, 1/2 cup mozzerella & 6 eggs. Sautée veggies in pan on stove (I used Pam) until soft. Add to crock pot. Whisk 6 eggs, cheese, sea salt & garlic powder then pour over veggies in crock pot. Cover and cook on high for 1-2 hours.
