Homemade veg korma🥰 tastiest and healthiest korma I've ever had, so happy with myself💚 I steamed chickpeas, broccoli, cauliflower, sweetcorn, peas, carrots, onions and added coconut milk, korma spices, garlic, ginger and pimento to make the sauce and I boiled the cous cous in veg stock and then added some peanuts and black pepper for an extra touch 😊😊😊 🌱 🌱 #vegkorma

Soya Navratna Korma Preparation Time : 15 mins Cooking Time : 20 mins Ingredients : 1. Boiled, rinsed & squeezed soya chunks 1 cup 2. Chopped carrots, beetroots, french beans, babycorn, pumpkin & cauliflower, 2 cups 3. Chopped capcicum 1 cup 4. Chopped tomatoes 1/2 cup 5. Gravy paste ( make fine paste out of 1/2 inch zinger, 8 cloves garlic, 1 small onion, 1tsp cumin seeds, , 1tsp coriander seeds, 2 cloves, 1 cardamom, 1inch cinnamon stick, 2 strands of mace/ javitri & a pinch of nutmeg powder ) 6. 2 tbsp oil to cook gravy 7. Tofu cubes 100 gms 8. Kasuri methi 1tsp 9. Slitted green chillies 2 nos. ( As per your preference) 10. Salt to taste 11. Turmeric powder 1 tsp 12. Korma royal paste ( make fine paste out of 4 cashew nuts, 4 almonds, 1 tbsp melon seeds & 1 tbsp poppy seeds) 13. For garnishing, add 1/2 cup of roasted dry fruits ( optional) Procedure : 1. Heat oil in a thick bottom kadai, then add turmeric & gravy paste & cook on medium to low heat until it releases oil from side. 2. Then add chopped vegetables (except tomatoes & capcicum) followed by a cup of water. Cover the lid & cook until veggies become soft. 3. Then add tomatoes, capcicum, tofu, squeezed soya chunks, slitted green chillies, kasuri methi & royal paste/ coconut milk and cover the lid. Again, cook for 5 mins on medium heat. 4. Adjust consistency of gravy as per your preference, switch off the flame & garnish with dry fruits. Soya Navratna Korma is ready to serve. It goes well with roti/paratha/naan/ kulcha/ chapati/ dosa/steamed rice. . . . . ** In this curry neither I have added dry fruits nor royal paste. For creaminess, I have added a cup of coconut milk into it. But generally, dry fruits are the core ingredients of "Navratna Korma". . . #VegKorma ✌️
