We’ve been dreaming forever of going just to experience the ambience (not thinking they would have vegan baked goods) and there were so many options! With Ella Fitzgerald playing, this vegan carrot cake with a pot of orange earl grey tea was such a cute moment shared with my momma 💕🎀🍊🥕

BBQ BROOOOO 🔥 This weekend is looking banging, sunny sun sun ❤️. If you’re having a bbq this weekend you really need to get the Waitrose vegan sausage swirls on the grill. They do two kinds, normal ones and then Spanish chorizo which I think are the best. I don’t know what’s better, the taste, or the face of a meat eater when you pull out this bad boys 🌭

What’s your fav risotto? Do you make it at home, or is it more of a going out dish?⠀ ⠀ I love seafood or mushroom risotto, but I am not a fan of stirring a dish for 45 minutes. ⠀ ⠀ Nutritionally, it’s not the best deal for me.⠀ ⠀ All that starch quickly spikes my blood sugar, and my skin’s revenge is a cystic acne flare 😔⠀ ⠀ But I do love the simultaneous creaminess and bite of risotto. So comforting. ⠀ ⠀ Turns out, red lentils do the same thing: they swim in their own creamy sauce, and they have a bit of bite. ⠀ ⠀ They take about 15 minutes to make, with just 60 seconds of stirring. ⠀ ⠀ And they have loads of protein and fiber. ⠀ ⠀ They actually help keep blood sugar stable instead of spiking it. ⠀ ⠀ You need 30g of fiber a day, and each 1/2 cup has 7.5g. ⠀ ⠀ Oatmeal has about 2g of fiber for 1/2 a cup. ⠀ ⠀ In this photo, I plated a cup of red lentils, and that’s half your fiber for the day!⠀ ⠀ And, of course, it’s a gluten free, vegan dish. ⠀ ⠀ Ingredients ⠀ * 1 cup (140g) dry split red lentils⠀ * 1 teaspoon olive oil⠀ * 2 1/4 cup low sodium mushroom broth⠀ * 1/4 cup dry white wine (optional; substitute more broth if not using)⠀ * 1 teaspoon Trader Joe’s umami seasoning or dried porcini ⠀ * Salt, to taste ⠀ ⠀ Directions ⠀ * Over medium heat, warm up oil in pan⠀ * Add lentils, stir to coat, about one minute ⠀ * Add broth, wine, seasoning. Mix and add salt to taste⠀ * Turn heat to low and cover. Cook for 12-13 minutes until the liquids have mostly absorbed⠀ ⠀ Mushroom red lentil “risotto”⠀ 50g mushrooms | 17g protein | 16g fiber | 200 cals⠀

I am so excited to share this Thai peanut salad, I’ve made it twice in 2 days it’s so good! it’s a kale salad that tastes nothing like kale salad 😉🙌 if you make it, let me know how you like it! . 🥬 Salad: Kale, Quinoa, Purple cabbage, Grated carrot, Edamame beans, Chopped green onion, Cucumber & Cilantro. You can also top with peanuts if you like! . 🥜 For the peanut dressing: (I made just enough for this salad) I used: 1/2 cup smooth peanut butter, 3 tablespoons tamari (or soy sauce) - mix that first, and then add juice from 1 lime (I really like lime, you could use half a lime) ☺️ 1 tablespoon maple syrup, 1 teaspoon sesame oil, 1-2 teaspoons fresh ginger & pinch of red pepper flakes! . ✨A tip for kale salad is to massage your kale! it makes it less crunchy, more yummy😋 enjoy friends! ✨
