I hardly cook plain grilled chicken. It's too boring! Since I still had swiss cheese left over from making my ham and cheese sliders, I decided to make grilled chicken cordon bleu. It's so easy to make and its so yummy! I served it with a herby béchamel on the side that really brought it to the next level. It hardly took any time to make because I found some thinly sliced chicken breast on sale at Harris Teeter so I got to skip the step of having to pound out the chicken into thin slices. I guess the French God's were on my side this week. Oui Oui! Ingredients 1/2 pound of thinly sliced chicken breast Sliced ham Sliced Swiss cheese Garlic salt Black pepper Olive oil Béchamel 1 tablespoon of butter 1 tablespoon of flour 1 cup of milk 1 teaspoon of chopped parsley 1 teaspoon of chopped thyme 1 tablespoon of parmesan cheese S & P Directions Pre-heat a skillet to medium-high heat. Take a slice of chicken breast and sprinkle it with garlic salt. Take a slice of cheese and ham and lay them over top of the chicken. If the slices are larger than the slice of chicken, fold them over in half. Roll the chicken breast up and secure the end with a toothpick. Do this with all the slices of chicken breast that you have. Drizzle Olive oil in the pan and sear the chicken, making sure to rotate every about every 2 minutes until the chicken is cooked through about 7 minutes. Remove the chicken from the pan and let it rest. While you wait for your chicken to rest, pre-heat a small sauce pan to medium heat. Add the butter and wait for it to melt, add the flour and whisk into the butter for about a minute to get rid of the raw flour taste. This is your roux. Slowly add the milk whisking as you add it into the roux to make sure you have a smooth consistency. Add the herbs and S & P to taste. Continue to whisk it until the consistency is thick enough to coat the back of a spoon when dipped. Turn off the heat and add the parmesan cheese . Whisk the cheese in, it should melt into the sauce fairly quickly. Slice the chicken and serve the béchamel on the side or over the top of the chicken.
